Will my customers know it is not a person?

Some will, and it is set up to be straightforward rather than to pretend. In practice the thing customers care about is that somebody picked up and their appointment got booked. The alternative they are comparing it to is your voicemail.

What happens when it does not know something?

It says so and takes a message with the details, then escalates to you. It is set up not to guess at prices or commit you to work you did not agree to — that is a much worse failure than saying "let me have him call you back."

Is $597 worth it for a business my size?

Do the arithmetic on your own job value. If your average job is $400 and it saves you two a month that you would otherwise have lost to voicemail, it has paid for itself. How is this different from an answering service?
