The text-back is, deliberately — simple things break less. The receptionist is not; it holds a conversation, knows what you charge and where you work, and puts a booking in rather than promising somebody will call back.
Will customers know it is not me?
Some will. The ones who care were going to leave a voicemail anyway. The alternative is not "a human answers" — the alternative is nobody answers, which is what happens today.

Do I need a website for this to work?
No. These run off your phone number. Plenty of people start here and add the site later, and honestly that order makes more sense than the usual one.
